What is Amlou?

Think of amlou as a decadent blend of flavors and textures, often called the Moroccan version of Nutella—but healthier and richer. It’s creamy, nutty, and slightly sweet, making it perfect for spreading on warm khobz (Moroccan bread) or dipping freshly baked layered bread (msemen) into for a comforting breakfast or afternoon treat.

The Ingredients: A Trio of Perfection

  1. Roasted Almonds: The heart of amlou lies in its freshly roasted almonds. Ground to a smooth paste, they bring a warm, nutty flavor that forms the base of this spread.
  2. Argan Oil: Known as Morocco’s “liquid gold,” argan oil gives amlou its signature smoothness and earthy depth. Pressed from the kernels of the argan tree, this oil is rich in nutrients and history.
  3. Honey: Sweet Moroccan honey adds just the right amount of natural sweetness, balancing the nuttiness with a delicate touch.

When combined, these simple ingredients create something extraordinary—a food experience that’s deeply rooted in Moroccan tradition.

The Secret Ingredient: Argan Oil

Amlou gets its rich flavor and smooth texture from argan oil, one of Morocco’s most famous treasures. The argan tree is unique to Morocco and grows only in the southwestern regions, especially around Agadir and Essaouira. This makes the argan tree and its oil incredibly rare and special.

Argan oil is not just any oil. It’s packed with healthy fats, antioxidants, and vitamins, which makes it great for both your body and your taste buds. In Amlou, it brings a silky texture and enhances the roasted almond flavor, creating a spread that’s as nutritious as it is delicious.

The oil comes from the fruit of the argan tree. Extracting it is a traditional process, women in local cooperatives crack open the hard shells to get the kernels, which are then ground and pressed to produce the oil following methods passed down through generations. It’s a time-consuming process, but the result is a rare and exquisite oil prized for its taste, nutritional value, and even skincare benefits.

In fact, the argan tree is so unique and important that UNESCO has designated the region where it grows as a biosphere reserve. So, when you taste Amlou, you’re experiencing a product that’s as extraordinary as the land it comes from.
